The Excitement of a Texas TV Shoot

The Marketing Team gathered for our quarterly meeting and the decision was made to create some television spots featuring our mesquite-grilled 9oz ribeyes, 7oz sirloins and burgers. This is quite an event and many professionals come together to make all the beautiful footage we use in our commercials.

We work with a Robert LaTorre and his team at Big Fish Films. He is an amazingly talented and brilliant artist and director. Our first conversation begins with a budget and creative direction. Shot ideas and techniques are discussed, and soon after CurrentMarketing creates a storyboard of the vision for everyone to understand and agree to.
Next, our agency goes into coordination mode. Recipes are gathered, quantities of food items are determined. For example we may need 100 perfectly shaped brioche buns for our burger shot.

Talk about details! Everything is hand-picked and scrutinized. The food stylist makes all the difference. We spend the money to get the best because the food has to look great. And what you see is what you get. We don’t cheat on our portions. Everything is to spec. We use our product and processes. And I am on location to approve all presentations.

The shoot requires one day of pre-production and decisions on plated “stand-ins” for color and composition. Shot order is established, shot angles are walked through and reviewed via monitor. Hand movements are practiced and every second is planned out. We pack a ton in one day because shooting video is very expensive and as a 29-store restaurant chain we are frugal with our marketing dollars.

The day of the shoot is really a lot of fun. We have great “craft services” (code for unbelievable treats to snack on throughout the day). And a giant HD TV monitor so we can see every “take” very close up. Some of us get to participate in the shoot by flipping a burger or squeezing a lime. I am known in some parts as the “King of the Rib Tear,” a move I managed to perfect a few years ago.

The actual shooting, scheduled for early next month, will take three full days. I always look forward to working with everyone there, from the lighting techs or “gaffers” to the “steamer” (guy who creates the steam coming from a hot dish). It is an action-filled day with many decisions. It requires patience, creativity and experience. And we always come away with fabulous footage that we’re proud to use to represent Texas Steakhouse & Saloon.

Wild Card Wednesdays

Have you heard about all the fun we are having here at Texas Steakhouse on Wednesdays? I have to tell you about it because our guests are really having a blast!

Every Wednesday we play a game we call “Wild Card Wednesday.” Here’s the deal:

You bring in your family or friends-or both-and order your meals. After you place your order the “Dealer” comes by your table with a full deck of cards. Someone at the table gets to shuffle the cards, another person can cut the cards and then yet a third person can actually pick a card. And wow, can you win big. For every Joker that is picked, you can get up to 4 meals for FREE, excluding alcohol (state law). If you pick an Ace, the most expensive meal is FREE. If you pick a King, the least expensive meal is FREE. The Queen gets FREE BEVERAGES for the whole table, excluding alcohol and the Jack gets ONE FREE STRAWBERRY SHORTCAKE to share!

“Cowboy at Heart” wins big with Texas!

January 12th, 2010

Texas-sized congratulations go out to Eric Miller, December winner of our Texas Steakhouse for a Year sweepstakes! Eric, who hails from the Princeton, West Virginia area, was chosen at random from over 3,000 entries and will receive a $25 gift certificate each week for 52 weeks.

An avid horseman, Eric is known to show up at the Princeton Texas Steakhouse and Saloon with up to 15 of his fellow riders — plus their horses in tow! And he says that he seeks out Texas Steakhouse not primarily for the steaks, but for our Crunchy Fried Shrimp and Chicken Tenders.

Eric adds, “I’m basically a cowboy at heart, so it fits. We usually show up at Texas Steakhouse at the end of a long day on the trail, after we’ve been riding about 8 hours. We let the horses rest in the trailers while we basically clean the place out.”

Travelin’ – Real Texas Style

We receive all sorts of good stories here at Texas Steakhouse headquarters, but this one is a new favorite of ours. Donna Franks, a three month long member of our Real Texan E-Club and West Virginia patron, recently submitted this story to us on our Texas Steakhouse & Saloon Facebook Fan Page:

“I want to thank you, Texas Steakhouse, for helping me return home to my family. In November I flew to visit Harvard Graduate School. Somewhere along the line I lost my driver’s license and I didn’t have it for identification for the return flight home. The airport dude asked me if I had any other form of picture ID and I found one! My Texas Steakhouse Gold Club card, complete with picture uploaded as required, came to my rescue. I was able to board my flight and return home. Thank you, Texas Steakhouse!”

Toasted What?

I love our margaritas now that we are using quality ingredients like Monin syrups. It has made all the difference in our sales and most of our guests order a second one because of the “drinkability.” Our 99¢ Margarita promotion has been a big hit, with Classic and Strawberry Margaritas as the main favorites. Until now.

The Bar Team just introduced a new flavor for the holiday season called, “Toasted Marshmallow.” And it is quickly becoming the favorite! I was a little skeptical at first. Mixing tequila with something I have always eaten between two graham crackers with melted chocolate? Hmmm. I had to try it and wow, what a surprise. They actually taste great and you don’t really notice the tequila. A guest sampled one AFTER her meal last night, instead of dessert, and said it was a great finish!

You have to try one. It’s only $1.49 for a limited time and guaranteed to make you feel “toasty” all over!

Comfort Food

I love “Comfort Food” this time of year. Something about the cooler temps and layers of clothing that make me crave what I would deem the “heavier” recipes. Maybe I just let myself off the hook from constant weight watching because I know I am going to gain my “winter five” no matter how disciplined I am. And when I think of comfort food these days, I’m thinking of the Chicken Fried Steak at Texas Steakhouse. It has to have a million calories in it. Between the breaded and deep fried ribeye (yes, a great steak) and their peppery gravy and mashed potatoes, I am well comforted. And I save up all day long, only nibbling “rabbit” food, so there is plenty of room. It is amazing because it tastes so fresh and hot. The breading is key. And the gravy brings it all together. Wow!

Mondays are better in Texas!

I don’t know about you but Mondays are not my favorite day of the week. I have to let go of the weekend, can’t sleep in, and between work and the kids, I am usually very stressed out by the end of the day. And then I heard about 99¢ Margaritas on Monday nights at Texas Steakhouse. So, my husband and I got a babysitter and decided to check it out. And to our surprise, these margaritas are the real deal. They are amazing in fact. Not watered down like you might expect for that price. And the range of flavors makes it fun.

I personally LOVE the Cantaloupe margarita. It’s just a bit sweet and has sugar around the rim. My husband likes the Desert Pear margarita. He says it makes him “pucker up.” I asked the manager what makes these margaritas taste so good and he told me it was the Monin flavoring. Well, I can tell you that they are better than any margaritas I have had anywhere.

French Press Coffee Service

I have to admit that when I first heard Texas Steakhouse was going to implement a new coffee product and it was going to be brewed using a French Press, I thought the CEO had lost his mind. What does anything French have to do with Texas and how in the world are we going to sell a $2.99 coffee when Starbucks is on every corner? And then I got to try it.

From the moment the server brought it to our table, it was an experience. The small silver pot was filled with locally produced 8th Sin grinds stirred with some very hot water. We were informed that we should wait a few minutes while it brews. The coffee aroma was so alluring I couldn’t wait to press the coffee into the bottom of the pot and pour the first cup.

Wow! Finally a cup of coffee in a family restaurant that I can actually say tastes better than Starbucks. And the pot is sized so that the customer actually gets a cup and a half. The coffee flavor is pure and healthier because we avoid those bleached and toxic paper filters that so many other restaurants use.

Come in and try it. The second pot is FREE right now. And the Grandma’s Shortcake goes really well with it!!!

A soldier and Texas Steakhouse

Last night a soldier came in to Texas and he had just gotten back from Afghanistan. He told me how much he wanted a really great steak so I suggested the new 7-pepper sizzling New York strip. And of course a classic margarita to go with that.

I also have a military background so I can really relate to these guys that come in from being overseas. I wanted his experience to be all he had envisioned and took pride in personally delivering his meal. The look on his face when he took his first bite made me feel so good. He clearly loved the steak suggestion.

And to top it off, we gave him and his family our 10% Military discount. They were blown away that Texas honors our active and retired military. The soldier and his family were a pleasure to have in my restaurant. It is an honor to serve these young men and women. Especially knowing what they go through to serve us.
